The Schubert Theorem lies within a branch of mathematics known as ‘knot theory’. It states that any knot can be uniquely decomposed as the connected sum of prime knots. Aptly named, this wine deconstructs the Schubert family vineyard into its distinct sections, taking the finest elements of each and re-assembling to connect and enhance their strengths.

Blackcurrant pastille, blueberry compote, crème de mûre, cassis, black liquorice, brined, black olives, exotic, sweet spice, anise, espresso, hot earth, smoke, warmed oyster shell, nori and graphite. Quite an extensive list however, this tips the iceberg as I could easily spend a day with the bouquet alone. Unbelievably dark and brooding on the palate. Powerful, muscular and alive with sun-drenched blue and black fruits whilst being tempered by cooling steel, warm earth and sweet Asian spice. This exudes quality and magnificence – it really does. Not one facet of the palate escapes the sumptuousness which radiates in silken waves. The fine-grained tannins provide shape and structure as does the crisp acidity. There’s an obvious nod towards minerality. The exoticism is particularly alluring as is the effortless nature. A magnificent wine – truly so…”
